Recipe of the Month - Soup

         1 tablespoon oil 

        1 medium onion             onion_peeled.jpg

 

        3 carrots                     carrot_bunch.jpg

       1 apple                        green_apple.jpg

       450 mls. stock             stock_2.jpg

  

       Method to make enough for 4 people

  1. On your chopping board chop the onion and place in a little pile then using the grater grate the carrots and place apart from the onion.
  2. Put the oil - vegetable or sunflower oil  will be suitable  - in the pan and place over a medium heat on the cooker. Add the chopped onion and saute gently stirring with your wooden spoon.
  3. When the onion looks soft and  " see through" add the grated carrot and stir well together. Turn the heat down to low and put the lid on the pan. Leave to cook gently for 5 minutes.
  4. Now grate the apple and after 5 minutes add to the pan along with the stock. Put the lid back on the pan and allow to simmer gently for another 10 minutes. Mix your soup with the wooden spoon and taste to check for seasoning, some stock can be salty so it is best to check first before adding any more salt.
  5. If you wish to have a smooth soup you can put it in a blender and add some cream to it. If you prefer a rustic hearty soup just give it a good stir and serve.
  6. Serve your soup sprinkled with some fresh herbs if you wish and with some crusty bread.
